Our Extra Virgin Olive Oil, awarded several times, was born in our company at organic cultivation from three varieties of native olives "Cerasuola, Biancolilla and Nocellara."
The environmental and cultivation conditions of our olive trees groves are the traditional and characteristic ones of the Trapani area, the soils are of alluvial origin or deriving from scaly clays, thanks to which the olive trees draw nourishment to give us the olives and the "Angelicum" oil.
The Cerasuola cultivar is the main variety spread in the north-western side of Sicily, with greater intensity in the contiguous areas of the provinces of Trapani and Palermo. From the pressing of the olives you get a very tasty and aromatic oil, harmonious and balanced. The cerasuola cultivar has a good adaptability and excellent stability over time, famous for its high polyphenol content.
Nocellara is widespread in the Trapani area, it’s used for canteen and for oil. It’s harvested early (October - November), and the oil yield is around 18%. It stands out for its excellent fruitiness, and a good spicy and bitter taste. Good stability over time.
La Biancolilla is widespread in the central-western area of the island. It’s a typical oil cultivar. The fruits are ovoid in shape. The color is light green to violaceous pink when ripe. The oil yield is around 13%-15%. The oil has a light and delicate fruitiness. Excellent adaptability, average stability over time.
