Passito of Pantelleria DOP 500ml. 14,5% vol.
Produced in Pantelleria and obtained from Zibibbo grapes harvested by hand from different vineyards scattered on the island.
The bunches, once selected, are left to dry on "stinnitura" (under the sun) for twelve-eighteen days according to the climatic trend and patiently turned by hand.
The grapes are then pressed and the must, rich in sugars, is left to ferment at a temperature between 25 and 28°.
Subsequently, the wine matures for about eight to ten months in steel tanks.
Wine with a warm amber yellow color with enveloping and sunny orange reflections.
The first scent that is perceived is the intense one of apricot, in succession we find the peach in syrup, the cooked apple, to move on to aromatic herbs such as rosemary and oregano. In the finish there is also a slight note of incense. On the palate it is sweet, but with a good acidity that does not make it cloying, enveloping, balanced, with a pleasant bitter note in the finish.
The land on which the vines stand give the wine the organoleptic characteristics that have allowed it to obtain the D.O.P. (Protected Designation of Origin) Sicily.
