This wheat comes from the uncontaminated territories of the Sicilian hinterland of Santa Margherita del Belice, cultivated by independent and courageous farmers, who with dedication preserve biodiversity and traditions.
The Busiata is since ancient times the typical pasta format of Trapani, which takes its name from the very thin stem "Busa" of a plant typical of the Mediterranean, commonly called "Disa"; The Busa rested on the stick of fresh pasta that was "quarried" to form its characteristic spiral shape.
